甲鱼蛋粉混合物的营养价值和食用安全性的初步探讨

     【摘要】 目的 探讨甲鱼蛋粉(TE)及甲鱼蛋粉与大蒜粉、维生素E、红花籽油的混合物(TEM)的营养价值及食用安全性。 方法 对甲鱼蛋粉及混合物的营养成分、含量及氨基酸、脂肪酸组成进行测定,并与甲鱼进行比较;通过急性毒性实验和60天重复给药毒性实验对食用安全性进行初步探讨。结果 小鼠经口给予TE和TEM 的LD50均大于15g/kg体重;60天喂养实验表明,在本实验剂量下,大鼠一般行为体征、体重、食物利用率、血液生化学、病理学等各项指标与对照组比较均无与TE或TEM相关的毒性表现。结论 本研究未观察到TE、TEM的急慢性毒性,初步得出TE和TEM大鼠60天喂养试验未观察到有害作用的最大剂量(NOAEL)分别为0.75g/kg体重和5.0g/kg体重。

    The primary nutritional and toxicological assessment ofturtle egg powder mixture

    【Abstract】 Objective To assess the nutrients content and the toxicological safety of turtle egg powder(TE) and turtle egg powder mixture(TEM)(comprised of TE, garlic powder, vitamin E and safflower oil) as healthy foods. Methods The contents of macronutrients and the composition of amino acid and fatty acid were analyzed by Japan Food Research Laboratory; the acute toxicity test and 60-day repeated-dose feeding test were conducted with ICR mice and SD rats.Results In general, the nutrition facts of TE was nearly equal to that of turtle, and no obvious toxic signs had been observed in the toxicological test, whether acute or subchronic, the LD50 of TE and TEM were both large than 15g/kgbw, and the NOAEL of TE and TEM were 0.75 and 5.0 g/kgbw respectively. Conclusion Our study suggested that both TE and TEM were relatively safe for human consumers. ......
