Abstract The bolete are among the most common ,widespread groups of wild mushrooms . it is found from the north - eastern Hilongjiang
Province to the south - western plateaus of Yun - Gui and Tibet . It is considered a good edible mushroom in our country and is widely collected
for domestic and overseas markets . Some of them have a very strong flavor and abundant amino acid. and also used as a Chinese medicine. In the
paper ,we used the edible bolete as main material ,used the peach ,peanut as additive , then mixed special condiment to produce canned bolete. It
owed special good flavor and health function.

我国肝菌资源非常丰富。在我国发现的具菌管
或具菌褶的牛肝菌目(Boletales )的种类多达 390 种以
上,其中199种是可食的。可食牛肝菌资源以西南和
华南地区最为丰富。
牛肝菌为肉质大型真菌,含有丰富的氨基酸,多
糖等人体所需的营养成份。本研究制成的软罐头营
养丰富,味道鲜美,携带和食用方便,同时又具有一定
的药用价值。随着人工培植肝菌技术的日益完善,以
及作食品的方便化和功能化越来越受到人们的重视,该软罐头产品具有较好的开发利用前景。
1 材料与方法
1. 1 材料与设备
牛肝菌:购自农贸市场;
花椒、桂皮、大料、辣椒等调味料:购自农贸市场;
花生、桂皮、大料、辣椒等调味料:购自农贸市场;
蒸煮袋:采用聚酯(12 μm) 铝箔 (9 μm) 特殊聚烯
(70 μm) ( PE AL PP)复合蒸煮袋,大小为15cm × 11cm ......
