揭阳市餐馆中李斯特菌污染调查

摘要:目的 了解揭阳市餐馆中李斯特菌的污染情况及其污染途径，为制订相应管理措施提供科学依据。 方法 对2005年从揭阳市区餐馆中随机抽取食品和环境样品采用GB4789.30-2003，并参照《食品微生物检验手册》 [1] 进行李斯特菌检测。 结果 在揭阳市餐馆中30份食品、20份环境样品中检出2株李斯特菌，其中食品中检出1株，环境样品检出1株，这两份阳性样品来自同一餐馆。 结论 餐馆食品和环境样品中存在李斯特氏菌交叉污染的可能，今后应加强对餐馆中李斯特氏菌的监测，并加强对餐馆的卫生管理。关键词:食品和环境样品;李斯特菌;污染;调查
