     摘要：目的制备番茄红素油树脂微囊，并对其稳定性进行考察。方法用单凝聚法制备微囊，并用正交实验优化制备工艺。用分光光度法测定番茄红素的含量。结果番茄红素油树脂微囊的最佳制备工艺为囊心囊材质量比为1∶10；成囊温度为40℃；搅拌速度为400 r·min-1。结论经微囊化处理后番茄红素稳定性提高，且更方便制剂。
