苦味感知研究进展(1)
[摘要]现代科学研究认为,人类对于苦味的感知是通过舌,软颚等处的味蕾介导的。苦味受体(T2Rs)表达在组成味蕾的味觉细胞上,在苦味感知中发挥着重要作用。T2Rs是G蛋白偶联受体家族成员。关于苦味感知的分子生物学研究已有一定突破。同时,苦味也是中药五味之一。研究认为其物质基础为生物碱,苷类等苦味化合物。然而,对于苦味中药中苦味化合物在体内的作用靶点及这些靶点与疾病的预防治疗之间的潜在关系的研究领域并未涉足。本文在此将对苦味感知的相关研究进展做一概述。关键词:苦味苦味受体中药计算机辅助药物设计
Abstract: Sientific reseaches reported that bitter sence is transfered by taste buds which locus in tougue and soft palate in mamalls. T2Rs expressed in taste receptor cells play an important roal in the bitter perception.Meanwhile,Bitter is one of the Five flavours of the Traditional Chinese Medicine(TCM). People have generally acknowledged that the bitter flavour is mainly contributed by some bitter compounds that’s alkaloids and glycosides. However,the targets of those bitter compounds are still unclear in the field of traditional medicine,so does the relationship between the targets and diseases.Therefore,the related study about the sense of bitter taste will be reviewed here.
