2010年深圳市光明某区食品污染物监测结果分析(1)

     【摘要】目的:了解深圳市光明新区食品污染物现况,完善“深圳市食品污染物监测体系”,同时为保障本区的食品安全提供科学依据。方法:选择本区主要的集贸市场、超市、餐厅酒楼、食堂等,随机抽取水产品、肉类、蔬菜类等5个大类13个品种共100份食品样品,开展微生物及理化项目的监测,并将监测结果进行统计分析。结果: 5类100份食品样品总合格率为57.0%;每类食品的合格率按照从低到高依次是肉类、水产品类、小食品类、蔬菜类及其他,分别为6.3%,13.6%,75.0%,85.0%和95.5%。各类食品食源性致病菌的检出情况不同,从高到低依次是肉类、水产品类、小食品类,其食源性致病菌的阳性率分别为87.5,77.3%和5.0%。各类食品中检出金属超标的情况不同,从高到低依次是小食品类、水产品类、蔬菜类、肉类及其他,其金属超标率分别为20.0%,18.2%,15.0%,6.3%和4.5%。结论:本区的部分食品受到食源性致病菌、铅、镉、铝的污染,存在食品安全隐患,应引起相关监督部门的重视。

    Results Analysis of Food Contaminants of Guangming Shenzhen in 2010

    【Abstract】Objective: To understand the status of food contaminants of Guangming Shenzhen, and reinforce “food contaminants monitoring system of Shenzhen City”. It also provides the scientific basis for safeguard of local food safety. Method: Some main markets, supermarkets, restaurants, dining halls etc. of this region were selected, and 5 kinds 13 items and 100 pieces samples were selected randomly. We examined for microbiological and chemical factors and the results of monitoring were analyzed statistically. Results: The total qualification rate of the 5 kinds 100 pieces samples was 57.0%. The qualification rates of each kind were 6.3%, 13.6%, 75.0%, 85.0% and 95.5%, which were arranged from low to high, and the according kinds were meat, aquatic products, snack foods, greengrocery and other foods. The detection rates of pathogenic bacteria of each kind were different, and those were 87.5,77.3% and 5.0% which were arranged from high to low. The detection rates of metal over standard of each kind were different, and those were 20.0%, 18.2%, 15.0%, 6.3% and 4.5% which were arranged from high to low. Conclusion: Some foods of this region were contaminated by pathogenic bacteria, Lead, Cadmium and aluminum. There was a hidden danger in food safety and it should be paid more attention of the local supervisory authorities.
