     摘要:目的以番茄不溶性膳食纤维为原料,用酶解法提取可溶性膳食纤维(SDF)。方法经正交试验优化提取工艺,并在优化条件下循环提取。结果制备SDF的最佳工艺条件为:酶用量10 %,酶解时间6 h,酶解温度60 ℃,pH 4.0;以最佳条件连续反应,产率可达31.1 %。结论确定了酶提取SDF的最佳工艺;证实循环工艺可以提高提取效率。

    Technology Study on Water-soluble Dietary Fiber Extracted by Cellulase

    Abstract:Objective To extract the water-soluble dietary fiber (SDF) from tomato insoluble dietary fiber (IDF) by cellulase. Methods The optimal technology was obtained by orthogonal test, then, the circulating extraction was arranged under the optimal condition. Results The optimum condition of SDF extraction was as follows: 10 % cellulose for 6 h at 55℃ with pH 4.0. Under the optimal condition, the circulating extraction was performed with a higher yield of 31.1%. Conclusion The optimal extraction technology can be obtained and the circulating extraction can be used to increase the extraction rate of SDF. ......
