[摘要] 目的:研究在微波辐射下提取茶多酚的最佳工艺。方法:采用正交试验法对微波功率、微波辐射时间、乙醇体积分数、料液比等影响因素进行了研究。结果:绿茶末的微波辅助提取茶多酚的最佳工艺:微波功率为中高火,微波辐射时间为3 min,乙醇体积分数为70%,料液比为1∶15,茶多酚的收率为14.6%。结论:该提取工艺可有效提取绿茶末中的茶多酚。
